Most of the foods we love are delicious because they have pleasing layers of flavor and texture. Creating those layers is how you make a great tasting dish. We’ve discovered a way to add even more layers of flavor and even layers of sensation to a dish and adding these layers makes that dish even better.

What is it? It’s food and wine pairing. But not food and wine pairing as we know it. Many of us are happy with the pairing results we’re already getting. But after testing many of the current methods for finding good pairings, we found they just didn’t give us the best or, in many cases, even really good results. We discovered that we could do much, much better.

All that testing has given us a deeper understanding of what’s really going on with food and wine pairing. With this knowledge, we’ve developed a better approach for identifying the wines that add more of those pleasing layers to a dish. So now, we’re using this approach on all the dishes we love to find out which wines really do make our favorite foods even better.
